Controlled Ripening Room

 

1. All of us are aging, but some of us need ripening!

 

We need another temperature and humidity controlled ripening room for our aging cheeses.  By March we will have made so much of our milk into delicious cheeses that there simply won’t be room in the existing rooms to hold them much less age them. 

 

If you really like Sophie, Barat, Eden, Ouray, and Toussaint, you’ll want to help us raise $25, 000.  (A truly wonderful person will provide all the materials at cost and will oversee the project at no cost to us.) Now don’t forget the real reason for making and selling cheese: it helps to pay for the Education programs and support the Farm operation. A New Used Manure Spreader
2.We need a new used manure spreader.  What is it?  It’s a large container on wheels, built to receive and spread or broadcast, guess what?  Manure!  Manure is the gold responsible for restoring our pastures. We put it on the fields, providing lots of organic material to a relatively impoverished Northeastern rocky-type soil so that different sorts of grasses and legumes can grow.  Grass feeds the cows, goats, sheep, turkeys, chickens, and even pigs!!  Without this implement, our fields suffer, and so do our animals. And besides, a big pile of manure just outside the barn door is a very smelly affair, and then we all suffer. It’s an expensive object, however, even used.  $8,000. Please help. The alternative isn’t pretty! Thank you to those of you who donated money toward the new Manure Spreader.

3.Without a doubt, our little herd of dairy goats has done a very good job.  Not only have their winsome personalities stuffed the stores of children’s imaginations, but their milk -- oh yes their beautiful milk -- is nothing but the finest source for the cheeses you have come to know and love.
Here’s the line-up. Sophie: captivating, highly addictive, bloomy-rinded, aged  6 weeks. Eden: washed-rind, highly aromatic, aged 10 weeks.  Fresh: creamy spreadable cheese that begs to be used in almost anything you can think of cooking, preparing, or serving, better yet, sneak it onto a spoon (surreptitiously of course, because it’s just not polite) for a quick snack.  So what’s this all about?  Those goats need some room. An addition costing $6,000. They’ve asked for the Ritz Carlton to be moved onto the premises since their cheeses are pure class.  (We always have a problem with their inflated self-image, but nothing can be done about it.)  We hope to fool them with our very rustic version because they’ve never even seen a picture of the Ritz!  Please don’t send one.
We realize that this is a tall order, but there are lots of you who really do understand what it takes to do the things we do. We are depending on you to help us do what we do best by providing the behind the scenes necessities. Please earmark your donation for one of the above. Yes, you may have to use the word ‘manure’ on the memo line on your check. Let the bank think what it will.
